jeannette’s southern pralines (makes 36)
2 cups sugar
1/3 cup milk
½ cup light corn syrup
2 tablespoons butter
¼ teaspoon baking soda
1 teaspoon vanilla
2 cups pecans
1. combine first 5 ingredients in a heavy sauce pan; mix well.
2. cook over medium heat, stirring until sugar dissolves; cook until mixture reaches soft ball stage (about 20 minutes and 232 degrees).
3. remove from heat and vanilla and beat until creamy.
4. stir in pecans.
5. drop from spoon onto waxed paper.
6. let stand until firm.
